Mayo's the default condiment of choice in Most of the EU and Germany. They fucking DROWN them in mayo instead of serving it on the side, so it's like you're eating potato-flavored mayonnaise. I hate that.

Chances are that I would eat the fries plain. If the fries are subpar, dry let's say, and I was somewhere that it was my only choice because I just stood in a long line at a concert and hell no would I get back in line to order something else. That's when I would dip it in whatever they served it with. Same thing in a restaurant. I'm waiting for a flight...got 45mins to kill before the gate starts boarding, oh well, these fries came with aioli, and I don't have the time or the $22 to order something else. Oh, hey, they're good, this is fresh and lemony, then yea.
Otherwise, most of the time I'd only ever very light drizzle of ketchup on some fresh potato chip kind of fry, or it's plain.

Local chain here has roasted garlic and sriracha mayos for fry dips, they're pretty good.
