I used to live near an Olive Garden. I never understood why anyone would go there when there was a great family owned Italian Restaurant half a mile away.

It almost hurt to go to Olive Garden and eat something that I was used to eating at the Italian restaurant. For example, Chicken Marsala at Olive Garden was complete crap while the Chicken Marsala at the family owned Italian restaurant was truly heavenly.

If you don't live in the northeast or a major city, you certainly can't do this. Italian places are notoriously hit or miss in the Midwest, and when they're bad they're really bad. Even in Boston, several of the Italian places I went to fucking sucked. You generally have to pay top dollar for actual Italian food that isn't terrible.

When I said red onions I was thinking of Tropea onions which are sweet and delicate, I have to admit I didn’t think of it when I translated it hmm.

Yellow onions are fine but for my taste they’re too strong and will cover the rest of the delicate ingredients such as the mushrooms and Gorgonzola.
