There's generally no problem with frozen fries, it's how they get fried. The pub I work uses the same fries as a much less popular pub across town and the difference on the plate is unbelievable. The key is frying them at a lower temperature and allowing them to rest. Sure, it takes a little longer, but the other place that tries to fry them as quickly as possible so they are still sizzling when they get to your table are too shitty to justify the cook trying to usher you out of the establishment.

I work in sales for one of the big 4 French fry producers in the US. Almost everybody (90+ percent) uses frozen fries, from cheap fast food spots to high end places. There’s not a ton of benefit to cutting your own fries, especially with rising labor costs. In a lot of ways, frozen fries are superior (consistency, hold time, time/labor, variability in raw potato prices). Really the only places I see still cutting their own are places that have been doing things the same way for decades, or places that make a point of calling out their hand cut fries (farm to table spots, small places without walk in freezers, etc).

I've cooked in restaurants (from burger joints to high end) for nearly a decade and this is pretty much exactly what I was going to say. I honestly don't think anyone has ever asked if their fries are made fresh in house if they're ordering fries, and yet every place that cuts their own fries makes a point of saying so.

They're better than ore-ida, but still pretty basic. You buy them through distributors (yes, such as Sysco - though I don't like them for other reasons); you can't buy them if you're not a restaurant (or otherwise buying in bulk) as far as I know. The difference is also that they're being deep fried and not baked, and are then usually seasoned really well.

fat? it's a tiny portion of meat plus a bunch of vegetables on a flat bread. it being bad really only depends on what sauces are in it (eg, a greek yogurt sauce is okay, but a lebanese toum garlic sauce is made out of oil which is less good).

The major producers do have brands they sell retail. For example McCain makes Ore Ida, and Lamb Weston makes Alexia and Made In Idaho. You can’t buy their regular lineup retail though, you need to be able to fry most of their offerings

As others have said, fresh cut fries fucking suck and most people don't prefer them. They have more potato flavor but ever get very crispy and go totally limp in 2.5 seconds outside the fryer. That's why Shake Shack was forced to go back to the frozen krinkle cuts shortly after they tried to do fresh cut. Also, no place that is serving a shit load of fries will find it more profitable to blanch and fry to order.
