Very similar to my dinner/snack last night. Hummus, cucumber, baby heirloom tomatoes. I hit my hummus with a big dollop of Super Chili Crisp, since it was pine nut flavor, not homemade :/ and needed a little oompfh

Tortilla chips with yours? Hrm. I toasted some Aldi sourdough bread, then hit it while hot a drizzle of some olive oil and Za'atar spice blend. This blends really adds some Israeli mood. When I lived in D.C., they sold pitas with oil and za'atar at every grocery in the bread aisle, and it was a favorite side for a lot of dinners, toasting it up together.

dry beans soaked for 8 hours, boiled for an hour, 2 cups beans, 1/2 cup tahini, 1/4 cup olive oil, 3 cloves minced garlic, juices of one lemon, good dash of cumin and paprika(1/2 teason each?) salt and pepper. cold water as you process it to the right thickness in the food processor

some people will just add a little baking soda during cooking too, makes the skins softer and it's supposed to blend smooth after that. 1/2 teaspoon of baking soda per quart of water is the ratio i think.
