What's your favorite staple vegan recipes?

Here's mine:

>Smoky lentil stew

>4 dl or 1.7 cups of red lentils
>1-2 onions
>8 cloves of garlic
>2 carrots
>1 litre or 4.2 cups of veggie stock
>3 chipotles in adobo sauce, a few spoonfuls of the sauce itself to taste
>a can of tomatoes
>2 tablespoons of tomato puree
>cumin, coriander, cayenne, oregano, salt and pepper to taste (I do like 1 tbsp/2 tsp/1 tbsp/2 tsp/1 tsp each, maybe)

>dice the carrots and onions and fry in vegetable oil
>add chopped up garlic, fry for a minute or two, then add the tomato puree, fry for another minute maybe
>add the canned tomatoes (crush them if you're using whole tomatoes)
>add the veggie stock, chop up the chipotles and add them and a few spoonfuls of the adobo sauce, then add all the spices
>rinse lentils well and add them, stir
>let it simmer for ~40 minutes or until it looks nice and thick, you might want to give it a stir every 10 minutes or so if you're not using a non-stick pot
>adjust seasoning, serve with rice

I don't make much vegan food, but I do make vegetarian food as the egg & dairy industries are fairly moral if you purchase from the right producers.

i was just researching this the other night, afaik there aren't any places which don't do it.

Furthermore, even with backyard hens/chickens, it depletes their calcium and bone density quite a bit to lay an egg, basically takes a lot out of them, and if it's unfertilized they eat that egg to regain it back. not like it's TORTURE in that case to take it away from them, but I still do feel shitty about being so invasive and commoditizing them in a way that jeopardizes their health just for a fuckin fried egg, even though they're just dumbass chickens

I guess my all time favourites are mostly just variations of japanese and thai dishes, usually I post the whole recipe cause I like to spread vegan recipes on here, but I can't even pick one from the top of my head

I usually just make
-Japanese curry
-Japanese restaurant style ramen
-Thai curry
-fried tofu with whatever sauce
-buffalo wings with gardein chicken tendies
-pb&j
-mashed potatoes and green beans with bbq tempeh and creamed spinach
-pizza with artichokes, olives, capers, seaweed, random shit
-drunken noodles
-pad thai
-burritos
-shepherds pie
-burgers
-hot dogs


everything i make is pretty much just normal popular recipes but with the vegan version of whatever meat instead

i also occasionally eat >deenz and >chovies and >mussels because they most certainly lack the neurobiological faculties to feel fear and pain and its super healthy, but thats the most nonvegan i'll go

spinach and tofu ricotta ravioli,
ravioli with faux beef grounds,
fish and chips with gardein fish
stromboli with lightlife pepperoni (that shit was AMAZING but unfortunately I haven't seen it sold anywhere in quite a while)

kitsune udon (this is actually my all time favourite meal hands down)

look up cashew cheese recipes, those can be alright if done correctly but they're a pain in the ass cause you gotta soak em for a bit and usually need a food processor and cheesecloth, it's a whole pain in the ass

otherwise i guess you can soften them up in a curry or toss them with panfried/baked tofu in a brown sauce like the chinese restaurants do cashew chicken

I don't often eat vegan but dahl, I am a huge fan of all the seasonings and ingredients, if I had to pick a vegan dish that's the one. I cook it often but I add meat and cheese, plus eat with egg.

Stir some soft-ish tofu and onions around in a pan for awhile. Add spinach, curry powder, salt, and lemon juice. Pretend it's a paneer dish or saag. Eat with rice or awkwardly scooped onto one of those flatbreads Indians like so much.

Make mashed potatoes. Let it cool. Mix in flour. Let it rest. Roll and slice into small chunks. Boil until they float. Wa la: gnocchi. Mix with whatever -- probably an oily sauce.

Mushrooms: let 'em go in the pan for awhile, basically until cooked -- they will shrink and lose lots of liquid -- then add other stuff to the pan.
Good with corn, maybe onions and pepper.
Good with peas.
Good with nut milks and creams.
Good with a bit of mustard and miso.
