Does /ck/ worry about oil smoking points when cooking?

Worry? No. But I adjust which oil I use because I'm not retarded. Only a dumbass would sear with EVOO and defend it.

Yeah I like butter or olive oil for everything but will use other for searing because black bitter steak is not great.

this, just find a neutral oil
I'm Indian so I use refined olive, or monounsaturated safflower/sunflower. For low heat I use flavorless coconut oil. Butter or EVOO if I want flavor.

white people can usually get away with normal safflower, canola, or soybean/corn oil.

white people (and some other ethnicities) actually require more polyunsaturated fats because they evolved in cooler temperate climates.

During the summer when I have an open window? No. When it's winter and I'm hungry at 2am while my wife sleeps? Yes
