lungs are not easy to be made palatable.
bovine kidneys make one of the very best meal dishes ("rognone trifolato" with abundant parlsey).
almost as good as a fresh liver (it's the first thing you eat when killing an animal) or fried brain.
if you are into trying unusual cuts, you can get very good results with the cheeks ("ganascino") and the tail, and of course intestines ("trippa").

It's mostly benign for now, and I have full function in both kidneys despite how they look like a bunch of overripe grapes on the CTs. It comes with all sorts of related problems (last CT showed the cysts have started to appear on my liver), but prognosis is usually pretty good apart from the very probable kidney failure and required dialysis after age 40/50. About the only pain I get comes from their size; I'm a big man but I will go down fast if I get hit in the kidneys.
All-in-all, it's liveable, but not all kidney diseases are. Consider registering as an organ donor if you haven't already and don't have any moral objections to it. It's a small thing to do that can mean a lot to many people.

Liver taste is weird but texture is soft almost creamy (if properlycut)
Stomach is very chewy but doesnt taste much or rather has a very neutral flavour
