Not really familiar with curry, so can anyone who is give me a lowdown on the different types?

From what I've gathered, korma is known to be incredibly mild, madras and vindaloo are the hot ones and saagh paneer is just cheese and spinach.

You talking just Indian curry or global?
Indian started it all.
Then thai has bomb curries massaman is pretty dank.
There's the Caribbean curries which are cool.
Then there's the Japanese curry which is something entirely different.

Curry in general is a mix of spices.
Cumin and coriander are the big ones.
Then there's cloves and cinamon.
Others are nutmeg, mustard, fenugreek, cardamom, fennel, mace, star anise....depends on what your trying to do.
All have ginger garlic in onions. Lots have tomatoes. You probably wanna throw some chillis in for heat too.

I'd recommend looking up some videos by Madhur Jaffrey. It's well comfy like Stein or Floyd.

vindaloo is made with kasmiri chili which is not hot just fragrant, also vinegar and traditionally with pork as its from goa a former portugese colony full of catholic indians. vindaloo is a corruption of portugese words.
