Alas, I’ll create my own. Any pies welcome, pizza, custard, fruit, meat, whatever, just post pies you’re currently/recently ate or cooked.

Here’s a couple I made, the left is apple-banana crunch but since I’m dumb I used honey instead of white sugar (it tasted quite good though) and it turned the “crunch” into a paste. I’m gonna fix it next time.
The one on the right is coffee-chiffon, but if I’m being honest with you, I used too much gelatin because, as stated before, am dumb. Please share with me your pie making secrets/knowledge!

Only just got into making pies myself , so far I've tried vegan pumpkin pie for my sister, apple, and some sort of mixed berry...thing?? Not all that good, but honestly they all tastes pretty great.

Torta Pasqualina is an Italian vegetable e pie. Spanakopita is a spinach and cheese pie. Samosas could easily be converted to a conventional pie as they are basically handpies.

Also townsend and sons has at least 3-4 vegetable pies

"A Spring Greens Pie" (does contain some meat, but is primarily green veg)
"1795 Vegetable Pie", "Herb Pie for Lent", "18th Century Onion Pie"

It’s a bit of a pain in the ass, but sure

>buy or make graham cracker pie crust
>bake for a little in oven
>set aside, there will be no more baking involved
>take 3 eggs, separate whites from yolks
>mix a quarter cup of water with gelatin, there are no directions for how much gelatin, but you shouldn’t use a lot
>mix half a cup of water with instant coffee
>mix coffee, egg yolks, gelatin, and 1/2 a cup of sugar (or less if you like less sweet shit)

>Take 3 egg whites, still untouched
>add 1/2 cup of sugar
>beat them like they didn’t do the dishes
>the goal is to make it as close to meringue as possible, if you don’t have an electric mixer this may be difficult
>once properly beaten, put coffee mixture into pie crust, add meringue mixture on the top, and fold the egg whites into the coffee
If you use too much jello, the final folding step is rendered impossible. You also can use 1/2 cup of real coffee instead of instant, the recipe just says to use instant. Presumably some strong coffee works just as well.
