Stuffed cabbage is one of my favorite Ashkenazi dishes, but it takes FOREVER to make. The leaves need to be boiled, then drained, then trimmed. Then the meat filling needs to be mixed. Then the filling needs to be rolled up into each cabbage leaf, and then it all needs to slowly cook. By the time it’s all done, I’m not just hungry, I’m super duper hungry!

I was on the phone kvetching about how long the process takes with my friend Beth, and she suggested I make Unstuffed Cabbage. A friend had served it to her once for dinner. She didn’t have the recipe, but she gave me the basic concept… make a bed of cabbage, make the filling into meatballs, cover it with sauce and cook. This idea was intriguing, so I went for it!

Most cruciferous vegetables have this effect, though I don’t know which ones are more. Broccoli, Brussels sprouts, hell even lettuce. Can’t go wrong.

I like myself some stuffed cabbage. Make a sort of meatball out of ground beef, beaten egg, and cooked rice (my favorite, but flour or breadcrumbs can work too if you’re lazy) with finely minced onion and garlic, paprika, salt, pepper, thyme, and a tiny bit of brown sugar. Make sure to really get in there and mix it all up. Chop up some more onions slightly more coarse, and simmer those in some canned crushed tomatoes and plain sauce in a shallow pan or skillet with some more salt and pepper, provided it has a lid to cover it. Wrap your meatballs in the cabbage leaves, making sure they are nice and snug in neat little rolls (you may need to trim the “vein”, but I never do). Place them in the simmering tomato sauce and spoon the sauce over them, then cover and simmer for around 35-40 minutes or so. There should be enough sauce so that the cabbage is about 2/3rd submerged; they should “steam” and not stew, or they’ll get too soft and you’ll basically defeat the purpose of the dish. Periodically spoon more of the sauce onto the cabbage here and there during the cooking.

They’re done when the cabbage is tender and starting to become translucent. Serve with a side of white rice or mashed potatoes (my personal favorite). This recipe is easy and impossible to fuck up, with almost everything able to be eyeballed. The only thing I stress is having the right amount of tomato sauce to not fully submerge the cabbage rolls, but to still give them a nice steam.

Another good way to prepare cabbage is to sauté it with salt/pepper and mix it in with your ordinary mashed taters as a side to meatloaf or corned beef.

I also like to do a “poor man’s yakisoba” with ramen noodles. It’s not super healthy, considering the noodles are already fried, but fuggit. Simply stir fry some cabbage, julienned carrots, and red/white onion seasoned with salt and pepper in some vegetable oil (I add a dollop of sesame too). I make a shitty sauce out of ketchup/Worchestershire along with a pinch of garlic powder. boil your ramen for like 30 seconds or so till it’s nice and al-dente. Toss it in with your ketchup, along with some oyster and soy sauce. I season with some sesame seeds, as well. It’s not authentic at all, but I usually garnish with some green onion. You can also start by stir frying pork or chicken with your garlic and onion before the veggies to make it a meal.
