I have a pretty simple solution to the problem.

Instead of having whole ginger around all the time, I fill glass jars (Usually ones from Bonne Maman preserves) with a 1:1 mixture of pureed garlic and ginger with a bit of olive oil. Almost every time I use ginger, it's always in combination with similar amounts of garlic, so I just make a bunch of paste and use it over the course of a couple months.

That way, I don't have to fuck around peeling the stuff every single time I want to use ginger.

raw garlic can have the spores which grow in anaerobic places like in that oil. I think you drop pH to definitely avoid it, don't know if cooking beforehand would do it or just delay regrowth
