It's bought directly from the fishermen or through a trader who gets it from the fishermen. It is fresh as fuck usually. The fish used is quality fish, they probably use the best they can get. The rice is all but flavorless, without good rice sushi is shit no matter what kind of fish you put on it. It is seasoned with rice vinegar & mirin (might be more). The fish is sometimes aged a little bit too. Fish are also sometimes coated with sauces (e.g. eel). The presentation is delightful and elegant, very pleasing to my eye at least. Also most of these ingredients just taste&are amazing.

Jiro didn't make a movie about himself. That was David Gelb. And it wasn't even going to be about Jiro originally. It was planned as a general documentary on many different sushi chefs.
