What are some foods/recipes that actively take a long time to make? Not like some breads or doughs, which can take about a day to be ready, because most of that is just waiting.
I want recipes that'll have me in the kitchen working away for as long as possible.

Soba noodles, there's a skill and time-management to cutting the noodles. Then once the noodles are done you can make a broth from scratch and use varied toppings and additions that'll take more time to prepare. If you git gud it could be special too cause no one wants to go through the trouble of making soba.

Something like gyoza or ravioli is a lot of busy work. Especially if you take your time with the fillings.
