I would say it is a meme

The human brain achieved a breakthrough in evolution once we started eating tremendously nutrient-dense animal tissue. I think the health risks of eating red meat are overblown - apparently a 13% increase in risk of colon cancer and this is based on research methods involving recalling detailed info about what you ate over the last few years. Also colon cancer is one of the most preventable cancers if you get regular colonoscopies. We know what the precancerous lesions look like and they aren't hard to see.

Once you put in the initial effort, it's actually really easy. Cheaper than not being vegan, less likely to be deficient in something too. My fitness improved massively since going vegan.

Long answer? Our world is geared toward meat consumption. It is culturally entrenched within us to eat meat for any and all special occasions, to rely solely on meat for specific nutrients that can indeed be found in plants, to look at those who shun these cultural entrenchments with contempt. It is commonplace to blow off any dissenters who decide they are "holier than thou" in their eating habits, regardless of how healthy or "sustainable" it is. It basically boils down to yes it is viable, but do not expect anyone to care, to help, to be on your side, to understand, to accept what you are doing. This is why vegans form those ridiculous cult like groups. They will never receive support from meat eaters (basically everyone) regardless of the science behind it so if you want to live life on hard mode, go for it
