also, with sodium hexametaphosphate you can get that gooey texture but using actual high quality cheese

just a small pinch will do, it's a potent emulsifying salt sold on Amazon

Yes, I mean I've made all sorts of interesting sauces with sodium hxmp

once you aren't worried about them breaking anymore it's a lot nicer

like a big bag lasts years because you are only really using less than a tsp at a time

depends but sodium hxmp frees you to use aged cheeses with lower moisture content that would break if you tried making a sauce with them otherwise

aged cheddar, tomme is nice, sometimes blue

i try to get as much local farmers market cheese as possible and i freeze big hunks over the winter
