I'm sure this post will get soyjacked but I'd overall say Tabasco. Its vinegary and a bit overpowering but I love it on eggs and necessary for making Caesars. Also solid on baked potatoes and for adding a tiny bit of heat and some zing to sandwiches if you cut it with mayonnaise as a spread. Other than that I like to keep some Blair's on hand for straight heat, and maybe something like Louisiana for a really mild tangy flavor for general purposes. I've been trying to just use less hot sauces in general lately and typically only use them on eggs and lunch/snacks now.

I've been eating some scotch bonnet habenero recently and that shit is delicious. It adds a tangy sweetness. El Yucateco classic red is great too. Some off-brand mustard based sauce as well.

Tabasco is good to have around, it has its own flavor you don't really get from other sauces while a lot of the american "hot vinegar" style or mexican style sauces are pretty similar and interchangable.

Marie Sharp (the little old lady from Belize) used to make and sell Melinda's until her US importer copied her sauces, trademarked the name, and cut her out of selling in the US.
