How come there is not a big ramen chain out there? instant ramen is one of the most popular foods, so I'm sure there would be demand for something less instant.

I'm guessing the reason why ramen in general isn't popular around the states or world or whatever is exactly because we've come to associate ramen with dollar store instant noodles. I've seen a couple local chains, at least. They're all good, too. They have the real pork broth simmered for half a day. I'm glad the real ramen is catching on. Ramen in restaurants used to be shit. It was barely above instant ramen quality.

Also I live in the midwest and can walk to like 5 ramen places, the problem is boomers, not regions. Most boomer neighborhoods have none, most millennial neighborhoods have plenty regardless of where you are

ramen isn't as easy to get right as you might think, and there is significant prep work on the back end. And mediocre ramen is truly awful. There's a chain in NYC that's trying and it's not really working as far as I've seen. Place is a mess Overall it doesn't scale well because it's kind of a specialized skill in a funny way, and average Americans might be put off by 18 dollar bowls of broth and noodles (a fair price)

Ramen is hard to get right.
We had a Ramen-ya open up locally.
I went and ordered Shio Ramen, pretty basic.
It was barely above instant quality.
The broth wasn't particularly rich in flavor, the noodles limp. Even the egg was overdone.
I looked in the back, and it was all white guys cooking. Weeaboos do not make particularly good Japanese cooks.

Millennials have no interest in boomer chains with shitty American food, those aren't the competition to worry about. Almost all sit down cheap chains are dying

What they need to compete with is local asian places, or fast casual counter service places

People pay like $12-14 for a burger fries and a drink at 5 Guys, or a burrito and chips and drink at Chipotle or Qdoba. There are a ton of poke places popping up at above regular fast casual prices and seemingly doing great.
I think there is definitely a window for a fast casual ramen place

Window sure but I'm not sure the price point makes it profitable. There is a lot of labor that goes into ramen, and the broth isn't cheap to make either. You don't need a solid prep team to make burgers or burritos, but with this you almost need more skill in the back than on the pick up. I've been there, I've seen it, I've sold two hundred bowls countless times. It's not something your average fry or grill cook can pick up. Good ramen is going to continue to come from small chef run joints, and all you you should honestly be greatful for that, because it doesn't get better when you go corporate and scale.

people under 40 like legit ramen. They also hate chains.
Boomers think ramen is poor college student food full stop. They don't mind chains and will often seek them out because economies of scale means lower prices and uniformity means familiarity.
