Medium rare is going to help you get hers closer to well done. You can also have a second main that is going to just be your freezeable planned leftovers for later in the week, but offers an alternative in case you fudge this endeavor up. Roast a small ham or turkey breast (like for sandwiches).

You can ensure the ends get well done by browning your roast beforehand on all sides on the stove top in oil first, versus letting the oven do it on the top alone. You can even make sure one side gets more browning action on the stove.

She gets the well done end piece(s). If you think it's going to be more rare, try a thinner slice x2 off of both ends, then lay the slices on an oiled and hot cast iron, each side a minute or two to finish taking out the pink. (Or broil them). Ask her if she likes blackened prime rib, and you can hit it with some blackened seasoning spices, like it's a planned thing, and turn the heat way up, making your job easier to sear both sides like that. (When well done eaters dine in steakhouses, this is a pro tip to get prime rib well done without angering a chef opposed to it).
