It's identical if you're talking about nigiri or whatever. Just look at videos of people get sushi at the highly rated places in Japan. You will see really high quality versions of the same familiar structure.
Sushi rolls on the other hand not like the top four in your pic but like the bottom three in it are more of a Western bastardization. In Japan they usually don't want to grab the rice with their hands like that.

I lived in Shizuoka, Japan for 5 years. Sushi isn't exclusively a finger food, but it absolutely can be eaten with the hands.
I assumed you needed to use chopsticks, but the first work party I went to where sushi was served many of my coworkers were eating with their hands.
