Made with potato may just be GOAT. I've been trying to find recipes for homemade vegan cheese without oil since the consumption of oil is one of the causes that can affect the health of Vegans. according to some any type of oil (including olive oil) can clog the arteries.

I've been trying to cook with edible wax like parrafin and beeswax and also the capsacian found on the skins of super hot peppers to reduce my oil consumption.

Before realizing that potatoes might make a great substitute for Vegan cheese i thought about using wax and powdered nuts along with other ingredients but after experimenting a bit it seems that potato by itself would do the trick. I think a couple of more practices maybe with agar agar or other binders I could make something similar to thin american cheese. vegan cheese using potatoes is perfect because potato is already a natural companion to a burger. So it would go well with a vegan burger. This youtube video shows how easy it is.

Also you can make a great nacho cheese from Okra and Aquafaba, which is the water from chickpeas after soaking, along with a bit of spices like turmeric and powdered garlic. It looks stringy and goes great on nachos.

It's a crime that there isn't oil free vegan potato cheese and stringy vegan cheese made with okra on the market.
