BBQ isn't grilling. It's not even spit roasting. Smokers utilize indirect heat, air flow and most importantly, wood smoke, to cook meat over a long time. Offset smokers have the fire in a completely different compartment than the meat, other types don't even heat the wood to combustible temperatures, just enough to smoulder.
