Thanks. I try to have a couple super basic accoutrements like a nice mustard, nuts, honey, and grapes on hand in case I pick up a couple cheeses from the store. Most of the ones in my pic are leftovers from a board I took to a Christmas party the other day. Super basic picks, but still tasty. Good eye on the manchego, btw. Out of curiosity, which country do you come from? I fucking love blue cheese, and i'm a brit so I've eaten a shitton of stilton. Outside of perhaps roquefort (and even that only because its so damn salty), stilton is the strongest blue cheese I've ever tasted. Mild supermarket own brand shit can be pretty mild, but I've had proper quality stilton truckles I could barely eat they were that strong. Even a basic level good tier stilton is really fucking strong.

Idk, but it’s probably worth a try. My suggestion was just to get a lesser amount of Brie if you *really* feel like you couldn’t finish a wheel within the time that it would stay good in the fridge. Honestly, if any cheese would hold up in the freezer, I feel like some sort of bloom rind like Brie would be the best bet, seeing how high the fat content is. I feel like I’ve seen a couple recipes for Brie en croute that suggest throwing it in the freezer for an hour to firm up the puff pastry, as well as help keep the cheese from leaking all over the place.
