Vegan protein have lots of off-flavours and are often poorly able to form elastic matrices without very high temperature processing. Which generates compounds which aren't all that healthy.

Gluten is an exception to both those problems ... but unfortunately it's gluten.

It's hard to create a decent protein dense dish with a chewy texture with vegetable sources other than gluten at the moment. Maybe if fermented collagen gets cheap that will change.

It's pretty good from my own experiences, but I don't think I'd be fooled into thinking it was real meat. Side by side comparisons are very obvious, it's not a horrible taste but it's distinctly not meat (At least most of the ones I've tried), the biggest problem for me is the texture. It's just not a good texture, even grilled it's not anywhere near close enough to say, beef. I think they might have more luck with vegan ground 'chicken'.
