You don't need the bain marie, that part was stupid.

Season and whisk eggs with a bit of whole milk. Heat a pot on medium low until a Tbsp of butter just starts to foam. Eggs go in and stir constantly but gently with a spatula. 30 seconds on the heat then remove pot from heat for 30 seconds while still stirring constantly. Then back on the heat. 30 seconds on, 30 seconds off, 30 seconds on 30 seconds off. Stop when the eggs are just barely under cooked (always remember if eggs look done in the pan they will be over done on the plate).

Optional finishing touch is to melt a handful of shredded cheddar in the eggs. Serve over toast. Tastes like a liquified cheese omelette. Delicious.
