I want to make Xinjiang lamb shanks. They look good but all I can gather is that they're made with cumin and sesame. Does anyone who chings the chong know the proper recipe?

Definitely grill over wood/coals if you can lad. Just use whatever chili flakes you got. If the lamb is super gamey maybe marinate with liaojiu and soy sauce?

I don't think the Uyhgar would use liaojiu. Some decent Shanxi Vinegar would do instead. That's the black rice vinegar for the people who don't live there, look for ones with 山西 in the name.
