Most foreigners in the food business aren't chefs, cooks or even cooked their whole lives, even once. They might have been professionals children and quite rich back home, or criminals' children, who simply had enough dirty money to buy their trip overseas and set up the faux business, just enough money to start this business or invest in this franchise. Part of the revolving door of said business is they can write and sponsor expensive work permit visas to get all their dirty money friends and/or family a ticket to the country too. Otherwise, who would sponsor a min wagie to do a min wagie job? Because it's a type of visa to citizenship scam. They're doing menial labor for which they'd laugh their ass off back home to the little person.
In other words, they hate you, they don't like serving you, and you'll eat anything they make. They might even have grown up never having good food from a good cook's sensibilities. If you quiz and question some of the people who own restaurants you love, you'll find out the grandparents were in government, like I mean super powerful levels of millionaire business owners, and ran afoul of wanting to stay in the country for corruption in the government, something dangerous like a Venezuela kind of thing, or where their kids were kidnapping risks, that kind of thing. It's not always just QQpoverty and the american dream, just escaping some kind of loss of comfort in their old 3rd world shithole or facing political opposition.
