As far as a "deal" or not getting ripped off, these are vanity items, not real tools. They are coming from a country where the yen and price of consumer goods are not consider affordable by other standards and there can be tariffs. In other words, they're luxury market items you buy just cause you want it. I want it, therefore I buy it. So, buy something that is pretty to look at and appeals to you Color, type of wood, amounts of pretty swirls in the blade, and if feels good in your hand. These knives need constant sharpening. Bleh.
A cheap knife doesn't have a full tang and isn't balanced by weight. What do you intend to use your knife for? slicing a sushi roll? slicing bread? filleting fish? General use for everything you intend to make because you only want 1 knife? Santoku style in that case. Or small garnishing or zesting knife. Whatever! Buy several. The price is your own budget.

You got me thinking about doing a little shopping too, just peeked at Sur La Table online, and saw some sales. I'm looking at the Bob Kramer set. Yikes only sale for $1800. I love the dark grain walnut knife block with it though. But, honestly, I don't need 1 of everything in a full replacement set, was just looking for some fun new addition. What a nice gift that would be for yourself, though.
I love my old Kai Pure Komachi knives and amazingly still sharp as shit. The resell for good money since they no longer make them. They have a colored nonstick coating, and transparent handles. The Komachi 2 is extremely inexpensive, so if you just want something japanese, but not something to take special care with, they pure 2 are also quite sharp and durable workhorses for wet and rough treatment. Slicing without food clinging is nice as well. You can get them at BBB, or even Marshall's or Costco. Their tomato knife is one of my favorite tools.

An extremely polished surface is unlikely to rust. Unless you're very retarded it likely never will if you polished it to a mirror finish. Rust will always begin in coarse grinded areas first unless protected.
