They don't have to be in Europe. Americans remove a layer in the shells for no reason meaning they have to be refridgerated for you.

>eggs are also not refrigerated
Only Americans refrigerate eggs.
Your health standards at chicken farms are so low they can pass salmonella on, so in order to combat this the FDA requires eggs be acid washed.
This strips the outermost layer off the egg resulting in them having a greatly reduced shelf-life.
Other countries simply increase the standards for the chickens and immunise them so they don't have Salmonella in the first place and the eggs last for weeks, but USA has big companies that can lobby the government and bribe politicians so now you all have Salmonella acid eggs squirted out by sick chickens in battery cages "Oh, say! can you see..."

Because it doesn't matter.
What's matter most is destroing the thin protecting coat of the egg shell and exposing the customer to a higher risk or cross contaminations.

I know you are American but try to concentrate for a little.

> Eggs without salmonella

Europe: don't wash the eggs, the eggs has no salmonella and it's protected from other bacteria

America: wash the eggs, now the eggs is more vulnerable to cross contaminations with all the bacteria in the environment untill it trash the shelf where now you need to refrigerate it.
Then the customer goes to do groceries, pick up the eggs, which now don't have the optimal temperature to protect the eggs until the customer reach its home.

> Eggs with salmonella
It doesn't care anymore because chances are the salmonella bacteria are inside the egg too.
