when making some chicken or beef stock, should I

A roast the vegetables in the oven
B fry the vegetables in the pot before adding the water
C add the vegetables straight in with the water

i think it just depends on how you want it to taste. do you want it to taste like roasted vegetables? then roast them. if not, don't.

If you're making stock and not a soup that the vegetables will be a part of you just throw them in raw. You want to extract as much flavor as possible.

That sounds quite, good, OP. I will try that next time I make a stock. You can roast them long enough to get some char on them and elevate your stock, potentially.
