In english his use of "regular" in his phrasing of "unlike regular muscle meat" implied that he thought liver was muscle meat, an irregular type of it. Literally this.
America has money, and quality meat is readily affordable for us. Since we have money to blow on frivolous things, we also own carnivorous pets. Pet food is a huge industry, and its not cheap. I pay upwards of $30 for each bag of cat food, and dog food. And don't forget the other animals that we eat, like pigs, chickens, farmed fish... they need protein too, so the "garbage" parts go into animal feed where it belongs.
(You) can eat the shitty parts, I will not. And I don't feel bad about it, since they have other uses. Believe me, its not getting landfilled, everything is utilized for maximum profit.
