Hey, do you guys have some home methods of making plates go out of the kitchen at the right temperature? I have this tiny electric oven and I can only heat one plate at a time which is useless. Also I'm kind of afraid of my plates braking from the heat if I leave it too long in there. By breaking I mean discoloring and stuff like that. Is it safe to leave them at around 100C? I don't have a place to install heating lights.

I usually do it in a Dutch oven on an induction copktop, so the heat is really even. I'd do it much slower in a stainless pan on a gas or electric cooktop

The main think is never leaving any of it stationary for too long, I just find a set pattern of whisking that covers the surface and repeat it, occasionally changing it up if I see the centre getting too set.
