When I cook chiggen breast, I generally rub it with olive oil, sear it on one side with a touch of olive oil in the pan, then flip it, drop the heat and cover it until cooked through. However, the oil keeps getting burnt onto my pan. Should I switch to canola/vegetable oil for a higher smoke point, lower the heat at which I'm cooking my chiggen, or just accept that I'm going to be scraping my pan for the rest of my life?

just use cast iron, nothing sticks to it after a while

and unlike carbon steel the seasoning is melded into the pores of the cast iron so it's really hard to fuck it up

After you've got a good sear on the chicken just add some water to the pan and put on a lid to let the chicken steam. Just before it's done, take off the lid, let the remaining water boil off until the pan and chicken are dry, then take it off the heat. There's no chance for the oil to burn into the pan this way, even if the heat is consistently high, and the steam will cause it to cook more evenly, too.

Make sure you're not using extra virgin olive oil. Lower the heat. Consider avocado oil. It has a very high smoke point
