What’s the appeal of espresso?
I’m not talking a latte or an americano I mean straight espresso. It’s so much more bitter than coffee I feel like people just pretend to like it.
I became a barista last September and bought myself an espresso machine to practice at home with, and my customers all say I pull a good shot, but it always tastes like ass to me.

I’m Italian so I grew up with coffee being espresso only, and even here people drink it according to their taste.

I put a teaspoon of sugar and a bit of milk, making it a caffè macchiato.

If you go to a bar here they give you a little bag of sugar with your coffee if you want to add it.

Everything but espresso or espresso lungo though is dirty water so you’re just not used to coffee.

Pain by definition is not pleasurable as it is the antonym of pain. Bitterness being bad isn't generally thought of negatively as millions people all over the world consume bitter things. Also, what constitutes "extreme" bitterness is subjective for the very reason just mentioned. And last but not least, espresso isn't inherently bitter.

That really depends on many factors.
Generally it is a bit more bitter than a black American coffe, but it should be drinkable.

Generally the problem with bars is that
- use a bad quality coffe (i don't know how it is called in English but the non-arabic variety)
- over extraction of coffee. The machine are meant to produce a coffee as soon as possible but it will taste more bitter

I put a kettle on, grind my beans, tamp a basket, pour water off the boil on the portafilter, wait a minute, start my kettle again, takes 5 seconds to get back to a rolling boil, then pull the shot. I generally make a double americano, but i do occasionally make a straight espresso. I find it enjoyable after a meal with dessert or as a low volume high caffeine intermission while drinking booze.

I felt the same way, but I recommend you buy lighter roasted coffee. Jamaican blue mountain and normal arabica are what I've tried and usually have, and they are far less bitter than colombian dark roasts. French blends are also often too bitter for me too.
Don't be fooled, coffee doesn't have to be bitter. Go for a light roast. Trader joes lets you pick out espresso. Starbucks espresso is disgustingly bitter, I hate it
