I've taken to only making open pies with crumb topping because I can never manage to make a good crust, neither top or bottom, if I close it.

>prebake crust
>cool pre-baked crust; meanwhile, mix fruit, sugar and cornflour
>make crumb mixture
>pour fruit mixture into crust
>top with crumb mixture
>bake
>allow to cool so cornflour has time to set filling
>slice and serve

It's good, but without the top crust it feels more like a tart than a pie.
How the fuck do I make a top-crusted pie that isn't soggy all over? To be fair, my country doesn't do pie except for the crumb-topped type I make already and lattice-topped ones, so it's basically in my DNA to do it those ways. Still, I'd really like to make a proper Anglo-style pie.

Why does everything I bake have a raw bottom. Not soggy, it's still uncooked but the top browns ok. It's like the IR from the bars cooks the top but the oven doesn't isolate properly so the actual temperature inside is super low.
Does this sound like a problem old ass ovens have?

Do you use a ceramic baking pan by any chance? If so, try glass or aluminum instead. Ceramic takes way longer to heat up and so the bottom ends up underbaked
