Well my little convection oven wasn't browning it evenly and noticed that at the end. So I have to take it out and turn it. Couldn't do it very long as the meat would start cooking more.

The one issue I did have was the wrap got wet from the mushroom stuffing or the meat juices. And that the wrap wouldn't stay on the meat after it was cut.

it's really easy to ruin by overcooking. use a probe, and be careful of the carryover heat. make sure your duxelles is DRY or your bottom crust will be soggy and fall apart.

i think if you seared the loin harder itd be perfect. Those little convection ovens love to burn pastry, i had a sunovabitch of a time figuring it out but all i needed to do was run it at juuust a bit lower heat, you might try that for a more even crust
