Depending what state you're in, you can get raw milk cheeses, but they really only fit within certain guidelines. Dairy farms can produce this stuff, but it's not legal to sell. That's not to say you can't get some cool stuff they're working on, but it's not for most people to be able to buy. There are pockets around the US that make really good cheese.

All this confusion stems from American food labeling laws. They're constantly being deregulated/revised with loopholes that allow designer fillers to be substituted with no change to the label/ingredients list.
Used to be the name would tip you off it wasn't real cheese: "Cheese Food/Spread/Product/Snack" or "Slices" were the fake shit. Now even the last "real" commonly available 'murican cheese, Kraft Deli Deluxe, is completely changed and tastes like garbage. They didn't even bother with a "New Recipe! Same Taste!" graphic.

Once and for all:
Actual Process American Cheese is real cheese scraps combined with Sodium Citrate (The salt form of citric acid, as in citrus fruit.) ANY cheese scraps -- Gouda, Limburger, or the cheapest possible "cheddar".
That's It. Sodium Citrate. It was invented in Switzerland.

>Hell, all Tillamook's ice cream is probably the best store-bought brand out there.
Are you for real? It's air-filled store-brand-tier trash. I bought the oregon cherry and strawberry and there must have been 15 pieces of microscopic sized fruit chunks total between the two containers. It had so little smell/taste that my dog wouldn't even eat it. The nasty texture it leaves in your mouth is unlike any other "ice cream" I've ever eaten.

If you think their sharp cheddar is great, go to costco and buy a block of Cabot white extra-sharp cheddar and get your training wheels off.

If Tillamook is a plastic tricycle, cabot is the shitty BMX knockoff from costco with the handlebars assembled backward. Yeah--trash--but it's still an actual bike. Learn it and your skills scale.
