I learned cooking babushka style, so everything is eyeballed and all I can give you is an approximation:
> 4 lbs beets
> 1 lb carrots
> 1 lb white onions
> 1/2 head savoy cabbage
> 1/4 large bulb of garlic
> 1 gallon chicken stock
> 3 bay leaves
> salt to taste
1. Mince garlic
2. Julienne vegetables
3. Throw everything into a pot
4. Bring to a boil
5. Take down to low heat
6. Add salt as needed
7. Simmer overnight
If you can find sorrel, adding a bit gives it a pleasant tanginess.
