Heat olive oil in a skillet over medium heat. Saute onion until lightly browned. Stir in coriander, curry powder, cinnamon, paprika, bay leaf, ginger, sugar and salt. Continue stirring for 2 minutes. Add chicken pieces, tomato paste, sour cream, and coconut milk. Bring to a boil, reduce heat, and simmer for 20 to 25 minutes.
Remove bay leaf, and stir in lemon juice and cayenne pepper. Simmer 5 more minutes.

Curry can't be fucked up. Just get some fresh vegetables and meat on sale, brown them, add a little flour for thickening, add stock or coconutmilk and spices. You can toast the spices first of course. It's just easier for a newbie to season towards the end of the process than at the start.

If you're in uni then the spices might be a little pricy. I use premade sauce which is as good as you can probably make yourself. Then just saute some chicken thighs. I use Maya Kaimal tikki masala sauce.

Make your own curry paste OP. Just combine some garlic, ginger, chilies, peppers, onion, curry masaka and some coriander in a food processor. Blend into a paste and fry in your curry pot before adding veggies and chicked browned beforehand.

Also, make your own naans! combine some yoghurt, melted butter, water, yeast, flour and salt and knead. Let rise, divide into pieces and roll out with a rolling pin. Put in a piping hot pan and flip when starting to bubble. Brush with garlic butter when you take em out and sprinkle with salt.

this is a more south east asian curry then an indian curry, similar concept though except you can switch out the coconut milk for cream. its wrong to think of spices as expensive, sure there is an initial investment cost but you use them in such small quantities that the cost is negligible, especially if you are adding chicken which will literally cost more then everything else in the meal combined. i cant really give quantities on the spices, so it'll take you a good 2-3 times until you get the spice mix right.

this is kind of on point, on special i pick these up for 2 aud, and the cost of making the sauce below is only ~1.60 aud, so savings are negligible
>heat pan, add garlic and ginger(get a litre jar, very cheap) to oil
>saute onions until transparent
>dice chicken thigh or breast, add to pan
>add a can of tomato and a can of coconut milk
>season with cumin, garam masala, fennel, tumeric, coriander, chilli, pepper, cinnamon(controversial)
>add diced carrot/potato/whatever other veg you want(keeps it cheap, in uni i only had meat once a week)
>let it simmer for ~20 minutes
>serve with rice
>1 cup of uncooked rice with the curry makes 2 giant or 3 normal sized meals
