Why does no one like anchovies on pizza? They're a delicious change of pace and it's upsetting to see stores all over the U.S. discontinue anchovies.

No they don't make your pizza taste like that. I don't think you've ever had anchovy pizza. You can't taste even the slightest bit of fishiness. It's not like mackerel, the only flavor you get out of it is salt really. If it weren't for the added texture anchovy provides you could just pour some salt on your pizza and it'd be pretty similar.

I worked at a pizza place for a month earlier this year.
I made exactly one pizza with anchovies. It's not an ingredient worth keeping in stock.

Anchovies became an actual pizza topping because fresh anchovies were a favorite of Italian and Portuguese immigrants. Thing was it was actual fresh anchovies. Over time it became popular and chains like Domino's fucked it all up. Fresh anchovies aren't a salt packed clusterfuck of fish flavor. They are actually rather mild.

Whole fillets like that are not proper technique.
Cut it into small pieces and distribute.
As others have said, excessive sodium is a concern, because pizza is already a sodium bomb, every ingredient on there is already salty. The crust, sauce, cheese, pepperoni, sausage, olives, etc, already deliver a day's worth of sodium in a serving.
But the real reason why they are being discontinued: cost.
Its not cheap to buy anchovies. Go check the prices. Businesses are cheap, the name of the game is to sell cheap shit for as much as they can get, and anchovies drop out of that equation.

They kind of break down into little tender fibers that themselves break down. I wouldnt say they melt in your mouth but kind of macerate into what ever else you're chewing. They are salt bombs and are pretty fishy on their own but also full of glutamates. Ive always thought of anchovies as a seasoning more than anything else. A little goes far.
