2 tsp of cure per pound
160 degrees 5 hours
done. just make sure to wipe the meat and squeeze some moisture out with paper towels before dehydrating and before you put on the seasoning/cure. and then wipe down the excess grease on the meat after it has been dehydrated before storage. GLHF

In the spirit of halloween i'm making a goat's head soup based on an afghan recipe. This shit is taliban gamer fuel. Got my head defrosted and ready to roast before i throw it in the slow cooker.

Cut my veggies last night and got some pearl barley but got too dickered to get the slow cooker on. Gonna let that shit go on low for as long as i can once it's in the pot, old school recipe was to cook it over 3 days. made some pot pies yesterday. had the meat from half a turkey vacuum sealed up in the freeze. so i thawed the cooked meat, boiled some potato cubes, steamed a couple carrots, and sauteed some onions. thawed frozen peas. made a cream sauce with a touch of Parmesan and a little stock.

pie crusts are the only hard part, and mine are certainly not very pretty. made a bunch for leftovers because it already makes so many dirty dishes.

Saw some cheap boneless pork chops last night so I decided to make pork fried rice today. Cooked the rice last night as well as cubing the pork and marinating in soy sauce over night. Made salmon chowder, based on the serious eats recipe. Turned out pretty darn well, but I'm definitely going to make some changes next time. Making some sourdough bread. Kinda an experiment, didn't follow a recipe exactly, and using entirely yeast from my sourdough starter, no commercial yeast.

Starter, flour, water, sugar, salt, and a tablespoon of vinegar. I'll update with the baked bread later once it's fully risen and baked. Probably going to do an egg wash on top, and maybe something more on one of them. Not sure.
