Sup /ck/. I have a few scotch bonnet plants that have given me at least 2 dozen peppers. Is there a way to preserve them? Or a way to make a sauce out of them? I am going to the store within the next hour and would be grateful to hear something now

2 large carrots 1 medium onion 3 limes vinegar and 2-3 dozen habaneros, we are making traditional Belezian habanero sauce ! peel and chop carrots and onions boil them until soft ,and as it boils de-stem peppers,and put them in the pot 3/4 way into boiling carrots and onions to blanch peppers.get blender out and put 3 limes worth of lime juice and about the same amount of vinegar (to taste),and blend until a ketchup consistency for fresh traditional Belezian style hot sauce. put it in a mason jar and spoon out for serving sizes! keep refrigerated.

Make a hot sauce with sufficiently low pH (4-) and it will keep for a couple of years. Freeze peppers (you can't ferment if using too many frozen peppers). You can dry them.

You don't need much to make a sauce. Salt, vinegar, maybe some garlic / tropical fruit / onions.
