end points of trade routes, limited perishable food trade outside of ports, poor peasants eating whats locally grown, sparse population while ideas spread fast in dense cities
communism, soviets made satellite states produce limited amount of products so they'd be reliant on SU
Todays adults still experienced shit food made by their parents/schools when they had more limited resources, so they don't have a tradition of good cooking and like to eat what they know how to cook/is cheap.

Bonus for Scandinavia:
Rapid modernization lead to loss of traditional dishes. There is quite a bit of cured meat, pickle variants, cheese and milk beer that got lost to the annals of time and modernization.
And there is even more herb usage that got lost to modernization, since people stopped foraging the hills for spices over a few decades, and the knowledge got completely lost.

Sagas even mention milk alcohol, which i assume is kefir based. You know, for long term nutritional storage.

Peas doesn't belong in that dish unless they are in a mono ingredient white stew.
Its possible to salvage the dish, but it would mean using butter with spices as gravy.

The chicken however is not salvageable. Even something as basic as a pepper marinade would salvage the poultry.

I guess our traditional cuisine can look at little bland if you only know if from pictures, but a freshly caught fish or a nice cut of porkbelly doesn't really need a lot of spicing. Besides, even though spices had to be imported from far away, people here did make good use of herbs pretty much from the start.

It's true about spices being very expensive and difficult to get ahold of.
However those that could afford of them made liberal use of them: Allspice, used in Kroppkakor, or as a pickling spice for Herring.
Cinnamon and kardemum are used frequently in all manner of baked goods.
Clove, black and white peppar, bay leaf, Dill, parsley, juniper, ginger and mustard are all used frequently as well.
Try a bread baked in northern scandinavia and it will be filled with a fuck ton of spices and probably quite sweet. Magnus Nilson made a very intresting presentation about scandinavian bread culture. In summary the northern parts fresh baked loaves where a luxuary so you would put all your spices and sugar into those few loaves you did bake.
