Yes, I'm not disagreeing with your definitions of things. The issue is connotations.
What I'm trying to communicate is that in this context "bread," though it has many definitions, generally refers to a more specific type baked good that does not include quickbreads. Referring to "vanilla pound cake with some zucchini mixed in" as bread doesn't communicate what it actually is, and is misleading whether you mean it to be or not.

People call it bread because it's baked in a loaf tin, but it's actually a cake given that it has no yeast, but chemical leaveners just like most cakes. The same applies to "corn bread", which is also a cake, by the way.
