Just bought a sous vide, it gets delivered tomorrow.

Tastes pretty good imo, but I'd never buy one. Something about it (beyond the possible plastic leeching) just feels wrong, like overprocessed food. This is something my stomach should be doing.

Can you make pulled pork or slow roasted stuff with them? like brisket?

You can, but it takes days. I'm looking at recipes right now, including brisket and pulled pork. I doubt I'll do it often, but Ill certainly try it.

Basically, you put a brisket in the bath and let the sous vide run for 2-3 days, and then finish it off in the oven or a smoker for 3 hours.

Look into getting some MAPP gas and a fitting torch head with the canisters. Works great to sear with. Since it's quick it leaves as much pink as possible, which is the benefit of cooking meat sous vide.

70C 24h seems good for slow cooked pork. It was a slab of pork belly, a butt is like 2x as thick so might need a bit longer or just cut it in half because it doesn't fit in the bag anyways. I'm planning on doing some pulled pork this weekend.

I haven't done a pork brisket yet, difficult ti get a hold of in my area.
Pic related is pork tenderloin at 60c for 90minutes iirc.
You have to brine the briskets first though I believe. I've run some pork cuts for days and they only get dry as fuck.
