Do you really need to keep it in the fridge?
Its a vinegar based sauce mate, and hot peppers are even used as preservatives.
Also what is the difference between all of them? Most seem like basic vinegar/cayenne pepper sauces to me.

They don't have to be refrigerated but it helps preserve the flavor and color. I noticed my hot sauces kept turning brown with time, even when kept completely in the dark. I think the flavor changed too, they got less spicy with time. I recommend refrigerating them.

Last bottle I had was very good, but rather strange.
Its more of a sauce like valentina, but with a lot more spice, scotch bonnet flavor with some sweetness.

I only read the abstract, but it seems that paper is talking about dementia being related to chili intake, and indirectly through that declining cognitive function is too.
dementia, especially at young age, which the paper seems to be focused on, is influenced by hereditary factors. A study on the chinese and their gene pool does not necessary apply to america or europe.
It's like taking a study from sub-saharan africa that links tonic water intake to sickle cell disease and drawing conclusions about tonic water consumption in white countries.
