Recipes are just a guide, you shouldn’t blindly follow them because for example every oven is different so 30 minutes at a said temperature could be to much or too little for your oven, etc..

You should buy a digital thermometer like this: https://www.amazon.com/ThermoPro-Thermometer-Accurate-Grilling-Backlight/dp/B07MF18JHT/ref=mp_s_a_1_16?

Don’t follow the time but the internal temperature of the meat, so you won’t end with under/overcooked meat. Everything is under control.

Also stick to making dishes you know and can taste at the restaurant, don’t be that guy who cook Italian dishes the American way and pretends to know the thing. Be humble and eat outside.
