The labor used to be a guy with knives cutting meat thousands of times a day. Machine automates this process with greater precision and smaller risk of injury. A deli worker does 10 minutes worth of work on a product which hasn't seen its dollar value drop proportionately. I'm aware that each link in a supply chain needs its own slice of profits, but retail takes such a thick cut that it's ridiculous. There's no reason, for instance, why a whole turkey should cost less than a package of turkey breast.

whole turkey and turkey breast are 2 different things. turkey breast is actually pressed meat, it's not just taken straight off the turkey. there's also the difference in paying for the bones vs straight up meat.
When you price out chicken, it's $0.60/lb for a whole 5lb bird ($3), the breast are $2/lb, and assuming that is 1/2 the bird's meat, one would assuming ~$6 for the equivalent. the truth is, that 5lb bird probably has 3/4 lbs of breast meat, 3/4 lbs of thigh, leg, and wing, and the rest is packing fluid and bones (3.5lbs). if you aren't taking the bones and making stock, that's your fault for buying a whole bird and only using half.

Restaurant food costs aren't ubiquitous for each item of the same menu, though.
It should be 25-35% overall, but they're making more on the wings, fries, and soda, and less on the steak or fish. More on alcohol. Less on vegetables.

How much would you really pay for a side of, say, cauliflower au gratin? $4, $5? When accounting for the veg, heavy cream, cheese, and general labor that goes into it, they'd be selling it at $9 under a ubiquitous pricing scheme. That's just not how it works, my dudes.

Obviously when you pay 5$ for a side of fries those actual potatoes cost way less than $1.66, they probably cost closer to like 60 cents for that portion. It goes the other way too. If a place can only get ribeyes at 10$ a steak, obviously no one is going to pay $30 for that. So they have to put it on the menu at, say, a 40% food cost and balance out that with the other lower foodcost stuff on the menu.

Ive sat next to chefs as they cost the menu out in a big excel sheet. Yeah they stay between 25% and 35% but some stuff like starches and sodas have a huge profit margin and stuff like steak and fish have a smaller margin.

I bartend and most places have a 20% cost on alcohol and 15% on beer. Currently the place I work at has a brewery on property and whenever we sell a pint of Ruby Ale for $6.25, it actually only costs us 15 cents to make.

I work in a deli and it's absolutely a rip off, at least for the fried chicken we make. $1.49 for a leg/thigh, $1.99 for a breast, and $0.99 for a wing, but everyone buys it anyway. It's cheaper if you buy box deals, which give you some of everything. People regularly spend stupid amounts on chicken though, like buying 10 legs and 10 thighs for $30 because they didn't want to get a box and get wings/breasts too.
