I put them on screens infront of a big industrial fan. This is porcini drying out from a few weeks ago. After this I have them in a big box on racks with a dehydrator running inside it to remove the last bit of moisture.

Certain mushrooms rehydrated after drying better than others. But I’m not a huge fan of the texture of rehydrated mushrooms most of the time. I usually use them to give flavour to a broth and discard at the end. Or, blended into soups so that the rubbery texture is not noticeable. Usually combined with some store bought fresh mushrooms as well if it’s a mushroom soup. Mostly because the wild mushrooms have such a strong flavour that when you use only wild mushrooms I find it is too overpowering, I use some store bought mushrooms to mellow out the flavour a bit.

I'm from Reunion island (some of my ancestors got there on the first colonisation ship in 1665) but moved to Mauritius roughly 13 years ago.

My grandparents/parents used to come here very often on holidays (they had/have lots of friends and some distant relatives here) so I had been coming to Mauritius since I was very young.
I initially moved here to attend an Australian university's Mauritian campus (studied in other countries since) and never really left except for a period when I went back to Reunion to take care of my grandfater after my grandmother's death.

My fiancée is Mauritian though.

Language is absolutely not a problem, in fact the country doesn't even have an official language!
While offical government stuff and public schools are in English (Mauritius was a British colony until 1968) people in the street either speak Mauritian creole (which is mostly French-based) or French and almost all newspapers are in French (the island was French until 1810 but, among other things, the population kept the right to use the French language when the British took over).
MPs are even allowed to speak either English or French at the National Assembly.

Food is quite varied, with European, African, Indian and Asian influences (owing to the population's origins).
Biryani (called "briyani" here) is pretty much the national dish and local street food is mainly of Chinese and Indian origin; for example chow mein ("mine frit") is available averywhere and one of the most popular takeout items among the entire population.

Beef, goat, chicken and a little amount of mutton are produced locally (though the local beef isn't that great, imported South African or Australian beef is better) while pork mostly comes form the nearby Rodrigues island (also part of the Republic of Mauritius) or from abroad; apart from pork (for obvious reasons) most meat is Halal since ~15% of the population is muslim.
Most fruits and vegetables can be grown locally though the vast majority of arrable land is taken by sugarcane (and the price of sugar isn't very good these days...).
Milk used to be produced locally on a pretty big scale but the dairy industry has almost completely disapeared and people mostly use imported UHT or powdered milk.

Lived in different houses (one in Mauritius and another one in Reunion), when I transferred everything to Mauritius I ended up with some equipment in double/triple (I also got some stuff from my grandparents' house); there's even another 5-burner range (same as the one you can somewhat see in my photo) in my garage...
