i mean, when you go to good mexican restaurants or even tasty mexican food trucks, they offer you "salsa" (typically a verde or rojo) that they make, but the "hot sauce" is just the brand-name shit they leave on the table. similar to how you seldom see american restaurants offering their own signature ketchup but instead leave out Heinz stuff. in other words, hot sauce is not a common thing to make yourself, you're looking for salsa

i only put a splash or two per taco, so even one of those mini bottles of tapatio lasts me like a month+. if i tried to make a hot sauce from scratch at a "bottle" level i'm sure it would sit in my fridge for a long time and probably go bad

I make tuna stew with canned tomatoes/olive oil/garlic, then add canned tuna and usually original juan pain is good garlic style and mad dog 357
add coriander, black pepper, aleppo pepper, cumin, salt and a splash of soy sauce
simmer for half an hour, turn off stove and top with shredding mozzarella on top
