Split into 8, pressure cook it with garlic onion and carrot and a shit ton of water to get stock. Shred the chicken, take the skin out and make a layer in the trey. Cook rice in that stock, top it on the chicken with a tray. Brush an egg and add chorizo and then oven it.

Brine it and then roast the whole thing.

Used to work at a rotisserie which would do a 24-48 hour brine and the chicken was the best I've had in my life, by far. Juicy and tasty all the way to the bone. At home without that spice mix I just salt, pepper, and garlic the thing. Make sure you don't overcook. Roast potatoes are an amazing side, and chicken salad sandwich or a fried rice is the best use of leftovers IMO

Get some kitchen sheers, cut out the spine, cut down the breast done.

Brine for about an hour in heavily salted water.

Fire up the charcoal, toss in some smoking wood I like to use peach.

Heavily season with any rub you want really. S n P, doesn't matter.

slow cook at about 275 - 300 until internal temp is about 160 in the breast. Don't turn over btw.
Glaze with a lighter BBQ sauce, I like to water mine down a bit with some apple cider vinegar or Louisiana hot pepper sauce. Let that glaze on the grill for about 5 minutes. Take off, let rest, enjoy.
